Szechuan Stir Fry

Preparation Cooking Time: 30 minutes
Ingredients:
• ¼ cup soy sauce
• ½ cup water, divided
• ½ teaspoon red pepper flakes
• 1 teaspoon cornstarch
• 2 teaspoons balsamic vinegar
• 2 teaspoons sugar
• 1 tablespoon tomato paste
• 14 oz. tofu drained and sliced into cubes
• 2 tablespoons cornstarch
• 2 tablespoons vegetable oil, divided
• 4 cloves garlic, crushed and minced
• 2 teaspoons ginger, minced
• 4 cups green beans, sliced in half
Instructions:
1. First, add half of the water to a bowl.
2. Stir in the vinegar, soy sauce, sugar, tomato paste, 1 teaspoon cornstarch, and red pepper flakes.
3. Mix well.
4. Coat the tofu cubes with 2 tablespoons of cornstarch.
5. Pour half of the oil into a pan over medium-high heat.
6. Cook the tofu for 1 to 2 minutes per side or until golden and crispy.
7. Next, transfer to a plate lined with a paper towel to drain.
8. Reduce heat and add the remaining oil.
9. Cook the garlic, ginger, and green beans.
10. Cook for another 1 minute.
