Squash Lo Mein
Serving Size: 4
Preparation Cooking Time: 30 minutes
Ingredients:
• 1 spaghetti squash, sliced in half
• 2 tablespoons water
• 1 tablespoon rice wine
• 2 tablespoons oyster sauce
• 2 tablespoons soy sauce
• 1 ½ teaspoons honey
• 1 tablespoon hot sauce
• 1 tablespoon peanut oil
• 1 clove garlic, minced
• 2 teaspoons, ginger, grated
• 1 stalk scallion, chopped
• 1 carrot, sliced into thin strips
• 1 red bell pepper, sliced
• 1 cup peas, sliced in half
Instructions:
1. Add the squash to a heat proof dish.
2. Pour in the water.
3. Microwave on high for 10 minutes.
4. Let cool and scrape out the flesh to create the noodles.
5. Mix the rice wine, oyster sauce, honey and hot sauce in a bowl. Set aside.
6. Pour the oil into a pan over medium high heat.
7. Cook the garlic, ginger and scallions for 15 to 20 seconds.
8. Stir in the veggies and cook for 5 minutes.
9. Stir in the sauce and noodles.
10. Heat through for 1 minute before serving.
