Shrimp Fried Rice
Serving Size: 4
Preparation Cooking Time: 30 minutes
Ingredients:
• 4 teaspoons vegetable oil, divided
• 12 oz. shrimp, peeled and deveined
• ½ cup green onions, sliced
• 1 teaspoon ginger, grated
• ½ cup mushrooms, sliced
• 1 stalk celery, chopped
• ½ cup carrot, chopped
• 1 egg, beaten
• 2 egg whites, beaten
• 2 cups cooked rice
• 1 cup bean sprouts, rinsed and drained
• ½ cup green peas
• 2 tablespoons soy sauce
Instructions:
1. First, add half of the vegetable oil to a pan over medium heat.
2. Cook the shrimp for 2 to 3 minutes, stirring often.
3. Transfer to a plate and set aside.
4. Pour in the remaining vegetable oil.
5. Add the green onion, ginger, mushrooms, celery, and carrots.
6. Next, cook for 3 minutes while stirring.
7. Pour in the eggs and egg whites.
8. Cook for 10 to 20 seconds.
9. Stir in the bean sprouts and rice.
10. Stir the rice continuously for 1 to 3 minutes.
11. Add the peas, soy sauce, and shrimp.
12. Serve warm.
